Storage and preparation area
Food storage areas require occasional wash down as part of either a planned program or in case of spillage. The preparation operations produce food debris and many of them use water either in automated machinery or manually in a sink. The entire area requires appropriate drainage which is dependent on the nature of the operation. Drainage should ensure efficient surface water removal and keep the floor clean and safe.
